20 chocolate wafer cookies
2 tablespoons melted butter
12 ounces cream cheese
1 cup small-curd cottage cheese
1 large egg
3/4 cup sugar
6 tablespoons cocoa
1/4 cup all-purpose flour
1 teaspoon vanilla
1/4 teaspoon salt
1/4 cup amaretto
2 tablespoons miniature chocolate chips
Preheat the oven to 350 degrees. Have ready an 8-inch springform pan.
Finely grind the cookies in a food processor. Add the butter and process until mixed. Press the cookie mixture evenly on the bottom and 3/4 inch up the side of the pan.
Beat the cream cheese, cottage cheese, egg, sugar, cocoa, flour, vanilla, salt and the amaretto until smooth. Stir in the chocolate chips. Scrape the mixture into the chocolate crust.
Bake the cheesecake for 30 to 40 minutes, or until the filling looks dry at the rim of the cake and is firm in the center when gently shaken.
Run a thin-bladed knife between the pan rim and the cake. Refrigerate the cheesecake overnight. When ready to serve, remove the pan side and cut into wedges. Serves 10.
