Angel Food Cake Recipe
1/4 teaspoon salt
1+1/2 cups egg whites
1 teaspoon lemon juice
2 teaspoons cream of tartar
1+1/3 cups sugar, sifted 3 times
1 cup cake flour, sifted 3 times
1 teaspoon vanilla
Preheat the oven to 300 degrees. Have a 10-inch tube pan ready; do not grease or flour it.
Add the salt to the egg whites and beat until they begin to foam. Add the lemon juice and cream of tartar and beat until the egg whites stand in stiff peaks. Beat in the sugar, a spoonful at a time. Fold in the flour gradually and gently with a whisk or rubber spatula. Add the vanilla.
Bake about 1 hour. Invert the tube pan to cool (a glass bottle is good for this). When cool, remove from the tube pan and frost or leave plain. Good served with fresh fruits that are in season.
