Banana Cake Recipe 2

Banana Cake Recipe 2

2 cups cake flour

1 teaspoon baking powder

1 teaspoon baking soda

¾ teaspoon salt

1 ½ cups sugar

1 cup mashed, fully ripe bananas

½ cup sour milk or buttermilk

½ cup shortening

1 teaspoon vanilla

2 large eggs

½ cup chopped pecans (optional)



Preheat the oven to 375 degrees. Grease and flour two, 8-inch layer cake pans. Measure the dry ingredients into a sifter and set aside. Place the bananas, milk, shortening, vanilla and nuts in a large mixing bowl; beat until blended. Scrape the bowl and the beaters. Add the dry ingredients and beat for 2 minutes. Turn the batter into the prepared pans and bake for about 25 minutes, or until a cake tester comes out clean. Cool in pans for 10 minutes and then turn out onto wire racks to cool completely. Try serving with sweetened whipped cream icing on the cake and between the layers with sliced bananas.
