Cake Baking Pans
Cake baking pans are one of the most important items in your cake baking supplies and are crucial to baking the best cakes you can. Buy the best pans that you can afford; the thicker the metal the less likely the cake will overbake. Aluminum pans come in just about every shape and size you could ever want and, they seem to be the best metal to bake cakes in. Pyrex brand or other glass cake pans can overbake the outside of the cake before it's totally done on the inside. You can get pans with a non-stick surface inside of them, also. This makes it easier when baking cakes such as angel food in a tube pan or, bundt cakes that are in a decorative bundt pan and you want to get the cake out of them without it breaking apart or sticking to the cake pan.
If you're baking a delicate cake in a plain pan and you want it to come out of the pan perfectly, line the pan. To line a baking pan, use spray vegetable oil and lightly spray the inside of the pan, first. Then, set the pan on a piece of waxed paper and draw around the bottom of the pan to create a circle. Cut out the circle and position it in the inside bottom of the pan to cover it; the light coating of vegetable oil will hold it in place with no wrinkles or popping up. Then, spray the paper and coat the inside of the cake baking pan by shaking a little flour in it. Knock out the excess flour and you're all set to bake! You can also line the sides of a cake baking pan by lightly spraying first and then putting a strip of waxed paper around the inside of the pan; trim the paper to size with scissors or a sharp paring knife.
Something I have found that's even easier than lining the pan with waxed paper is to use"Baker's Joy." Baker's Joy is a combination of vegetable oil and flour in a spray can and can be found in just about any supermarket. It does a wonderful job of keeping a cake from sticking to the pan.
