Chocolate Banana Cake Recipe

Chocolate Banana Cake Recipe

2 ¼ cups sifted cake flour

1 teaspoon baking powder

¾ teaspoon baking soda

1 teaspoon salt

2/3 cup shortening

1 ½ cups sugar

2 eggs

2 squares (1 ounce each) baking chocolate, melted

1 teaspoon vanilla

1 cup mashed, ripe bananas (2 to 3)

½ cup sour milk or buttermilk

Preheat the oven to 350 degrees. Grease and flour two, 9-inch round layer cake pans.

Sift the flour, baking powder, baking soda and salt together. Cream the shortening with the sugar until fluffy. Add the eggs, one at a time, beating thoroughly after each is added. Add the melted chocolate and mix thoroughly. Stir in the vanilla. Add the sifted dry ingredients alternately with the bananas and milk in small amounts, beating well after each addition. Turn into the prepared pans and bake for 30 to 35 minutes.
