Chocolate Cherry Cake

Tips for baking with chocolate

1 1/3 cups sifted all-purpose flour

1 cup sugar

1/3 cup cocoa

1 teaspoon baking soda

¾ teaspoon salt

½ cup shortening

1 egg

½ cup Pet evaporated milk

¼ cup water

2 tablespoons maraschino cherry syrup

½ cup cut-up maraschino cherries




Preheat the oven to 350 degrees. Grease and flour an 8-inch square pan.

Sift the flour, sugar, cocoa, baking soda and salt into a 3-quart bowl. Add the shortening, egg and evaporated milk to the dry ingredients. Beat 3 minutes at medium speed, scraping the sides of the bowl often. Add the water and cherry syrup and beat well for 1 minute longer. Stir in the cut-up cherries. Pour into the prepared pan and bake on the center rack of the oven for 50 to 55 minutes, or until a cake tester comes out clean. Cool in the pan for 10 minutes before turning out onto a wire rack to finish cooling.
