Chocolate Fruit Cake

1 cup butter

2 cups sugar

2 cups mashed potatoes

4 eggs

2 cups flour

1/2 cup cocoa

1 teaspoon nutmeg

1/4 teaspoon cloves

1+1/2 teaspoons cinnamon

2 teaspoons baking soda

1 teaspoon salt

3/4 cup sour milk

1 cup mixed candied fruit

2 cups raisins

1 cup chopped nuts


Cream the butter and sugar. Add the potatoes and eggs; beat until fluffy.

Mix together the flour, cocoa, spices, baking soda and salt in a bowl. Add the mixed dry ingredients alternately with the sour milk to the creamed mixture. Stir in the fruits and nuts.

Pour into two, greased 9-inch by 3-inch loaf pans and bake at 325 degrees for 1 hour or until a cake tester inserted in the middle of the cakes comes out clean. Cool and wrap in foil. Let these ripen for several days before serving.
