Chocolate Marble Loaf Cake Recipe

Chocolate Marble Loaf Cake Recipe

1/3 cup shortening

1 cup sugar

1 teaspoon vanilla

2 cups sifted flour

2+1/2 teaspoons baking powder

¼ teaspoon salt

2/3 cup milk

3 large egg whites, stiffly beaten

1-1 oz. square unsweetened chocolate, melted

2 tablespoons hot water

1/8 teaspoon red food coloring

¼ teaspoon baking soda


Preheat the oven to 350*. Grease and flour a 9 1/2x5x3 inch loaf pan. Cream the shortening and sugar together until light and fluffy; add the vanilla. Stir together the flour, baking powder and the salt; add to the creamed mixture alternately with the milk; beat after each addition. Gently fold in the egg whites. Combine the remaining ingredients; add to half of the batter. Alternate light and dark batters in the prepared loaf pan. Zigzag a knife through the batter. Bake at 350* for about 40-45 minutes or until a cake tester comes out clean. Cool in the pan for 10 minutes then turn out onto a rack to finish cooling. Slice and eat plain or drizzle glaze on the top. This cake is also good with a scoop of ice cream.
