Chocolate Zuchini Cake

Chocolate Zuchini Cake

2 ½ cups sifted flour

2 ½ teaspoons baking powder

½ cup cocoa

¾ cup butter

2 cups sugar

3 eggs

2 teaspoons grated orange peel

1 ½ teaspoons baking soda

1 teaspoon salt

2 teaspoons vanilla

1 teaspoon cinnamon

½ cup milk

2 cups grated zucchini

1 cup chopped nuts


Preheat the oven to 350 degrees. Grease and flour a 10-inch tube cake pan.

Combine the flour, baking powder, baking soda, salt and cinnamon. Beat the butter and sugar and sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add the vanilla, orange peel and zucchini alternately with the dry ingredients; add the milk. Mix well. Add the nuts. Put into the prepared pan and bake for about 1 hour, or until done. Invert the pan to cool completely. Make a glaze of 2 cups powdered sugar, 3 tablespoons milk and 1 teaspoon vanilla. Beat well and drizzle on the cooled cake.
