Dark Chocolate Cake Recipe

Baking with chocolate

2 cups sifted cake flour

¾ teaspoon salt

4 ounces unsweetened chocolate

¼ cup shortening

2 cups sugar

2 egg yolks

1 ¾ cups milk

1 teaspoon vanilla

1 teaspoon baking soda


Preheat the oven to 350 degrees. Grease, then line with waxed paper the bottoms of two, 9-inch round layer cake pans.

Sift the flour with the salt. Melt the chocolate with the shortening over hot water; put into a large bowl and cool to room temperature. Add the sugar and mix well on low speed. Blend in the egg yolks and 1 cup of the milk. Add the flour mixture; mix until all the flour is dampened and then mix at low speed for 1 minute. Add the vanilla and ¼ cup of the milk; mix until smooth. Dissolve the baking soda in the remaining ¼ cup of milk; with a spoon, stir this mixture quickly, but thoroughly into the batter.

Turn into the pans and bake for 30 minutes, or until a cake tester comes out clean. Cool for 10 minutes in the pans on wire racks. Remove from the pans, peel off the wax papers and finish cooling on the racks before frosting.
