Dark Chocolate Cake

Tips on baking with chocolate

1 ¾ cups flour

2 cups sugar

¾ cup cocoa

1 ½ teaspoons baking soda

1 ½ teaspoons baking powder

1 teaspoon salt

2 eggs

1 cup milk

½ cup vegetable oil

2 teaspoons vanilla

1 cup boiling water

Preheat the oven to 350 degrees. Grease and flour two, 9-inch round layer cake pans.

Combine the dry ingredients in a large bowl. Add the milk, oil, eggs and vanilla. Beat this mixture for about 2 minutes at medium speed. Stir in the boiling water. This batter will be very thin. Pour into the prepared pans.

Bake for 30-35 minutes or until pick inserted in the center of the cake comes out clean. Cool in the pans for 10 minutes; remove from pans and cool completely before filling and covering with the frosting of your choice. A rich, deep chocolate buttercream would go well with this cake.
