Easy Chocolate Cake

Easy Chocolate Cake

1 ½ cups sifted cake flour

1 ¼ cups granulated sugar

1 teaspoon salt

1 teaspoon baking soda

2 squares unsweetened chocolate (1 ounce each)

½ cup shortening

1 cup milk

1 teaspoon vanilla extract

¾ teaspoon baking powder

2 eggs


Preheat the oven to 350 degrees. Grease and flour two, 8-inch round layer cake pans.

Into a large mixing bowl sift the flour, sugar, salt and baking soda. Melt the chocolate. Put the shortening into the flour mixture; pour in the melted chocolate; then pour in ½ cup of the milk. Add the vanilla extract to the remaining milk. With the mixer at medium speed, beat for 2 minutes, scraping batter from the sides of the bowl with a rubber spatula. Then, with the rubber spatula, stir in the baking powder. Add the milk mixture and the eggs; beat for 2 minutes.

Pour the batter into the pans and bake for 25 to 30 minutes. Cool in the pans on a wire rack for about 10 minutes; Turn the cakes out onto the wire racks and cool completely.
