Farm Fruit Cake

1 cup boiling water

1 cup finely chopped salt pork

1 cup molasses

1 cup sugar

2 eggs, separated

1 cup chopped seedless raisins

1 cup chopped dates

4 cups sifted all-purpose flour

1 teaspoon cloves

2 teaspoons cinnamon

2 teaspoons baking soda

1+1/2 teaspoons lemon extract


Pour the boiling water over the pork; add the molasses and sugar; beat well.

Beat the egg yolks and add to the pork mixture.

Dredge the raisins and dates in 1/2 cup of the flour. Sift together the remaining flour, cloves, cinnamon and baking soda; add to the salt pork mixture; mix well. Add fruit and lemon extract.

Beat the egg whites until stiff and then fold in to the pork mixture.

Grease and flour two, 9-inch by 2-inch loaf pans; pour in the batter. Bake at 275 degrees for 1+1/2 to 2 hours. Makes 2 loaves.
