Feathery Fudge Cake Recipe
2/3 cup soft butter or margarine
1+3/4 cups sugar
2 large eggs
1 teaspoon vanilla
2+1/2 ounce squares of unsweetened chocolate, melted and cooled
2+1/2 cups sifted cake flour
1+1/4 teaspoons baking soda
1/2 teaspoon salt
1+1/4 cups ice water
Preheat oven to 350 degrees. Grease and flour two, 9-inch round cake pans.
Cream together the butter, sugar, eggs and vanilla for 5 minutes at high speed on mixer until fluffy. Scrape the bowl occasionally. Or, you can beat by hand for 5 minutes. Blend in the chocolate.
Sift the flour with the baking soda and salt; add to the creamed mixture alternately with the ice water; beat after each addition.
Bake for 30-35 minutes or until cake tester comes out clean. Cool for 10 minutes in the pans and then turn out onto racks to finish cooling. Cool completely before frosting.
