Fudge Cake Recipe

4 ounces unsweetened chocolate

½ cup hot water

1 ¾ cups sugar

2 cups sifted cake flour

1 teaspoon baking soda

1 teaspoon salt

½ cup butter

3 large eggs

2/3 cup milk

1 teaspoon vanilla


Preheat the oven to 350 degrees. Grease and flour 2 round, 9” cake layer pans. Melt the chocolate in the ½ cup of water in the top of double boiler, stirring frequently. Add ½ cup of the sugar; heat and stir for 2 minutes. Cool the mixture until it’s lukewarm.

Measure the sifted flour, baking soda and salt and sift together. Cream the butter and gradually add the remaining 1 ¼ cups sugar to the butter and cream together until light and fluffy. Add the eggs, one at a time, beating well after each addition. Then, to the creamed mixture, alternately add the flour mixture and the milk, beating after each addition until smooth. Blend in the vanilla and chocolate mixture.

Pour the batter into the prepared pans and bake for 35 to 40 minutes or until a cake tester comes out clean. Cool in the pans for 5 minutes and then turn out onto cooling racks to cool completely. When totally cooled, frost with chocolate cream frosting, if desired.
