Key Lime Cheesecake Recipe

Tips for making cheesecake

2 cups graham cracker crumbs

¼ cup sugar

½ cup butter, melted

3-8 ounce packages cream cheese, at room temperature

1 ¼ cups sugar

3 large eggs

8 ounces sour cream

1 ½ teaspoons grated lime rind

½ cup lime juice


Preheat the oven to 350 degrees. Grease a 9-inch springform pan.

Stir together the first 3 ingredients and firmly press on the bottom and 1-inch up the sides of the prepared pan. Bake at 350 degrees for 8 minutes. Remove from the oven and cool; reduce the oven heat to 325 degrees.

Beat the cream cheese at medium speed until fluffy; gradually add 1 ¼ cups sugar, beating until blended. Add the eggs, 1 at a time, beating well after each addition. Stir in the sour cream, lime rind and lime juice. Pour the batter into the prepared crust.

Bake at 325 degrees for 1 hour; turn the oven off and partially open the oven door, leaving the cake inside the oven for 15 more minutes.

Remove from the oven and immediately run a thin-bladed knife around the edge of the cheesecake; release the side. Cool completely in the pan on a wire rack and then cover and refrigerate overnight. Garnish, if desired, with lime slices and strawberry halves.
