Molasses Pound Cake Recipe

The History of Molasses

½ cup shortening

½ cup sugar

5 large egg yolks

½ cup molasses

2 cups cake flour

2 teaspoons baking powder

¾ teaspoon salt

1 teaspoon cinnamon

½ teaspoon nutmeg

½ teaspoon cloves

2/3 cup milk

Preheat the oven to 350 degrees. Grease and flour a 9 ¼ “ x 5 ¼ “ x 2 ½ “ loaf pan. Cream together the shortening and sugar; add the egg yolks, one at a time, beating after each. Add molasses; mix well. Sift together the flour, baking powder, salt, cinnamon, nutmeg and cloves; add alternately with the milk to the creamed mixture. Pour into the prepared pan and bake for 1 hour.Cool for 5 minutes in the pan and then turn the cake out onto a wire rack to completely cool. If desired top with frosting or glaze.
