Molasses Prune Fruit Cake

Tips for making fruit cake

½ cup shortening

1 cup sugar

1 large egg

½ cup molasses

2 ¼ cups sifted all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt

½ teaspoon cinnamon

½ teaspoon cloves

½ teaspoon nutmeg

½ teaspoon baking soda

½ cup milk

½ cup seedless raisins

¼ cup each currants, chopped citron, soft prunes


Cream together the shortening and sugar. Add the egg and beat well. Add molasses. Sift together 2 cups of the flour, baking powder, salt cinnamon, cloves, nutmeg and baking soda; add alternately with the milk to the first mixture. Sprinkle the currants, raisins, citron and prunes with the remaining ¼ cup of flour; add to the batter.

Line a 9 ¼” x 5 ¼” x 2 ½” greased loaf pan with greased wax paper; pour in the batter. Bake at 300 degrees for 2 hours. Cool for 5 minutes and then remove from the pan and finish cooling on a wire rack.
