Coconut Pineapple Cake
Ingredients :
1. 2 cups of flour
2. 3 tea spoons of baking powder
3. 2 large eggs
4. 3 cups of sugar
5. 1/2 kg crushed pineapples (without draining the juice)
6. 2 cups Milk
7. 1/2 cup butter
8. 1 cup chopped cashew nuts
9. 1 cup coconut
10. 1 tea vanilla essence
11. 1/2 tea spoon lemon juice
Preparation :
1. Heat the oven to 300 degree Celsius.
2. Grease with butter in the baking pan.
3. Mix flour with baking powder in a small bowl with a wire whisk and set a side.
4. Take a large bowl mix egg, vanilla essence, lemon juice and 2 cups of sugar and stir it well and mix the content with the flour mixture prepared in the previous step.
5. Pour all the mixture in the pan and bake for 30 minutes.
6. While the cake, combine 1 cup sugar, butter, and milk in a sauce pan.
7. Bring to boil and stir it for 5 minutes.
8. Remove the pan outside and mix other ingredients and stir it well.
9. Pour hot icing over hot cake and allow the pineapple and coconut. The cake should be allowed to cool completely.
