Raisin Nut Fruit Cake

Tips for making fruit cake

2 cups all-purpose flour, sifted

1 cup granulated sugar

1 teaspoon baking powder

¾ teaspoon baking soda

1 teaspoon salt

¾ cup brown sugar, firmly packed

½ cup shortening

1 cup buttermilk

3 large eggs

½ cup nuts, chopped

½ cup raisins, chopped


Preheat the oven to 350 degrees. Grease and flour a 13-inch by 9-inch oblong cake pan.

Sift together the flour, sugar, baking powder, baking soda and salt. Add the brown sugar, shortening and buttermilk. Beat 2 minutes; add eggs, and beat 2 minutes longer. Fold in the nuts and raisins.

Pour into the prepared pan and bake for 45 to 50 minutes, or until a cake tester comes out clean when inserted in the middle of the cake. Cool completely. When cool, frost as desired and decorate with candied cherries and strips of citron.
