Ricotta Cheesecake Recipe

Tips for making cheesecake

1 pound ricotta cheese

1 pound cream cheese

1 pound sour cream

¼ pound butter

4 large eggs

1 ½ cups sugar

3 tablespoons flour

3 tablespoons cornstarch

½ teaspoon vanilla

Choice of fruit topping


Make sure that all ingredients are at room temperature. Preheat the oven to 350 degrees. Have a 10-inch, ungreased springform pan ready. Mix the ingredients on high speed for 5 minutes. Pour the mixture into the springform pan. Bake about 1 hour. Turn off the oven and leave cake in the oven for 1 more hour. Do not open the oven door. After the second hour take the cake out of the oven and let cool completely. Refrigerate overnight. When ready to serve, remove the side of the pan and the bottom, if desired and cut into wedges. Serve with your choice of fruit topping. Makes 12 servings.
