Spice Pound Cake Recipe

3 cups sifted all-purpose flour

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

2 teaspoons cinnamon

1 teaspoon cloves

1 cup butter, softened

2 cups sugar

4 large eggs

1 teaspoon vanilla

1 cup buttermilk


Preheat the oven to 350 degrees. Grease and flour a 10-inch tube pan.

Sift the flour with baking powder, baking soda, salt, cinnamon and cloves; set aside.

In a large bowl, beat the butter with the sugar at medium speed until light. Add the eggs and vanilla and beat until very light and fluffy. At low speed, beat in the flour mixture in fourths alternately with the buttermilk in thirds, beginning and ending with the flour mixture. Beat only until combined. Turn into the prepared pan and bake for 60 to 65 minutes or until cake tester comes out clean. Cool in the pan on a wire rack for 15 minutes. Then turn out of the pan onto a wire rack and cool completely. Slice thinly to serve.

For walnut spice pound cake stir 1 cup finely chopped walnuts into the batter before turning into the prepared pan.
