Strawberry Jam Cake Recipe

1 cup sugar

1 cup strawberry jam

2 cups flour

¾ cup butter at room temperature

½ cup buttermilk

1 teaspoon baking soda

3 large eggs


Preheat the oven to 325 degrees. Grease and flour two, 9-inch cake pans. Mix all the ingredients together well and pour into the prepared pans. Bake for 40 minutes or until a cake tester comes out clean. Cool for 10 minutes in the pans and then turn out onto wire cake racks to finish cooling completely. Fill with the following recipe when cool. This cake keeps well in the refrigerator and is best when made a day ahead of time.

Filling

2 cups sugar

1 cup milk

1 can crushed pineapple, undrained

1 orange peel, grated

¼ apple, peeled and diced

1 can coconut

1 cup chopped nuts

Cook the sugar and the milk together until thick; remove from the heat. Add the remaining ingredients. Fill the cake while the filling is warm so it is not too stiff.
