Sweet Chocolate Cake Recipe


Sweet Chocolate Cake Recipe

4 ounces sweet chocolate

½ cup boiling water

1 cup butter

2 cups sugar

4 large egg yolks

1 teaspoon vanilla

2 ½ cups sifted cake flour

1 teaspoon baking soda

½ teaspoon salt

1 cup buttermilk

4 large egg whites, stiffly beaten

Preheat the oven to 350 degrees. Grease and line the bottoms of 3 round, 8” or 9” cake layer pans with paper. Melt the chocolate in the ½ cup boiling water. Cool. Cream the butter and sugar together until light and fluffy. Add the egg yolks, one at a time, beating after each addition. Add the vanilla and melted chocolate; mix until blended. Measure the sifted flour, baking soda and salt and sift together. Add the flour mixture and buttermilk alternately to the chocolate mixture, beating after each addition until the batter is smooth. Fold in the stiffly beaten egg whites.

Divide the batter between the 3 prepared pans and bake for 35 to 40 minutes for 8” layers, or 30 to 35 minutes for 9” layers. Cool in the pans for 10 minutes then turn out onto cooling racks to finish cooling. Frost with coconut-pecan frosting, if desired. This is a delicate cake which will have a sugary crust which tends to crack.
