Almond Cheesecake

2-8 ounce packages cream cheese, softened

1/2 cup sugar

1/2 teaspoon vanilla

2 eggs

1 cup chopped white chocolate, divided

1 ready-made 9-inch graham cracker crust

1/2 cup chopped almonds


Preheat the oven to 350 degrees.

Mix the cream cheese, sugar and vanilla at medium speed with an electric mixer until well blended. Add the eggs; mix until blended. Stir in 1/2 cup of the chopped white chocolate.

Pour the filling into the ready-made graham cracker crust. Sprinkle with the almonds and the remaining 1/2 cup of chopped white chocolate.

Bake for 40 minutes, or until the center is almost set. Cool on a wire rack. Refrigerate overnight to thoroughly chill before serving. Makes 8 servings.

Tip: The best white chocolate has cocoa butter listed as one of the ingredients.
