Amaretto Cheesecake 2
1 1/4 cups crushed graham crackers
2 tablespoons butter, melted
2 tablespoons sugar
4 (8 oz.) packages cream cheese, softened
2 cups sugar
16 ounces sour cream
3 tablespoons almond extract
4 tablespoons amaretto
Preheat the oven to 375 degrees. Have ready a 9-inch springform pan. Combine the graham cracker crumbs, melted butter and the 2 tablespoons sugar. Press into the bottom and 1 1/2 inches up the side of the springform pan.
Mix on lowest speed the softened cream cheese with sugar until blended. Add sour cream, then eggs, almond extract and finally Amaretto, mixing each until blended.
Gently pour cream cheese mixture into crust in spring form pan. Bake at 375 degrees for 30 minutes. Turn oven off and leave cheesecake in oven for an additional 1 hour and 15 minutes. Chill overnight in the refrigerator.
