Chocolate Banana Cake
1 2/3 cups all-purpose flour
1 cup Light brown sugar; packed
1/4 cup cocoa
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup water
1/3 cup vegetable oil
1 teaspoon vinegar
1 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips
1/2 cup mashed ripe banana (1 medium)
Preheat the oven to 350 degrees. Grease and flour a square pan, 8 x 8 x2". In a small mixing bowl, combine flour, sugar, cocoa, baking soda and salt. Add water, oil, vinegar and vanilla. Stir in mashed ripe banana; beat until smooth.
Pour into prepared pan. Sprinkle chocolate chips over top. Bake 35 to 40 minutes or until wooden toothpick inserted in center comes out clean. Cool in pan on wire rack. Cut into squares.
