Chocolate Birthday Cake Recipe
3 cups sifted cake flour
1/4 teaspoon salt
3/4 cup butter or other shortening
2 cups sugar
5 eggs, unbeaten
1 cup thick sour milk or buttermilk
4 squares Baker's unsweetened chocolate, melted
1 teaspoon baking soda
1 teaspoon vanilla
Sift flour once; measure and then add the salt and sift 3 more times. Cream the butter thoroughly; add the sugar gradually and cream together until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add the flour alternately with 3/4 cup of the milk, a small amount at a time. Beat after each addition until smooth. Add the melted chocolate and the remaining 1/4 cup milk into which the baking soda has been thoroughly dissolved. Beat well. Add the vanilla. Bake in 3 greased, 9-inch layer cake pans at 350 degrees for 30 minutes, or until a toothpick inserted in the middle of the cake comes out clean. Cool in the pans for 10 minutes and then turn out onto wire racks to finish cooling completely. Frost with your favorite chocolate frosting, if desired.
