Chocolate Chip Cheesecake Recipe

2/3 cup chocolate cookie crumbs

1+1/2 tablespoons melted butter

3-8 ounce packages cream cheese, softened

1 can sweetened condensed milk

3 large egg whites

2 teaspoons vanilla

1/2 cup miniature chocolate chips

Preheat the oven to 350 degrees. Have ready an 8-inch springform pan.

Combine the crumbs and melted butter. Press evenly over the bottom and 3/4 inch up the side of the springform pan.

Beat the cream cheese, milk, egg whites and vanilla until very smooth. Stir in 1/4 cup of the chocolate chips.

Scrape the batter into the prepared pan. Sprinkle the top of the batter evenly with the remaining chocolate chips.

Bake for about 30 minutes, or until the cake only jiggles slightly in the middle when gently shaken. Cool on a wire rack and then refrigerate overnight. When ready to serve remove the pan side and cut the cheesecake into 10 wedges. Serves 10.
