Cranberry Spice Cake

½ cup shortening

1 cup sugar

1 egg, beaten

1 cup raisins

½ cup chopped nuts

1 ¾ cups sifted all-purpose flour

¼ teaspoon salt

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon cinnamon

½ teaspoon cloves

1 pound can of Ocean Spray cranberry sauce (jellied or whole)

Cranberry Cream Cheese Frosting (recipe follows)


Preheat the oven to 350 degrees. Grease and flour a tube pan or two, 8-inch round cake layer pans.

Cream the shortening and sugar; add the egg. Stir in the raisins and nuts. Combine the dry ingredients and sift; add to the first mixture. Stir in the cranberry sauce. Bake in the tube pan for about 1 hour or in the layer cake pans for 30 to 40 minutes. Cool in the pans for 10 minutes and then turn out onto wire racks to finish cooling. Frost with Cranberry Cream Cheese Frosting when completely cool.

Cranberry Cream Cheese Frosting

3 ounces cream cheese

4 tablespoons Ocean Spray jellied or whole cranberry sauce

1/8 teaspoon salt

1 pound confectioners’ sugar

Soften the cream cheese with the cranberry sauce. Add the salt. Gradually add the sugar, beating until creamy.
