Jam Cake Recipe (Grandmother Shaver's)

1 cup butter

2 cups sugar

2 cups blackberry jam

3 eggs, beaten

1 cup buttermilk

3 ½ cups flour

1 teaspoon soda

1 teaspoon cinnamon

1 teaspoon allspice

1 teaspoon baking powder

1 teaspoon nutmeg

1 teaspoon cloves

Cream the butter. Add the sugar and jam. Mix well. Add the eggs and buttermilk. Sift the flour and other dry ingredients and add to the mixture. Beat well. Bake in 2 greased 9-inch cake pans at 350 degrees for 30 minutes.


Caramel Icing


1 cup buttermilk

2 cups sugar

½ teaspoon baking soda

½ cup butter

½ cup brown sugar

1 teaspoon vanilla

Combine all ingredients in a saucepan and cook to softball stage on low heat and test in cold water. Stir mixture constantly. When softball stage is reached, remove from heat. Beat until creamy and ready to spread. It takes about 20 to 30 minutes to make.
