New York Style Cheesecake

Tips for making cheesecake

Crust:

1 cup graham cracker crumbs

1 tablespoon sugar

1 tablespoon melted butter

Filling:

3-8 ounce packages cream cheese, at room temperature

4 large eggs

1 teaspoon vanilla

1 cup sugar

Topping:

2 cups sour cream

1 tablespoon sugar

1 teaspoon vanilla


Preheat the oven to 375 degrees. Have a 9-inch springform pan ready.

Make the crust: combine the crumbs, sugar and butter, mixing well. Spread the crust evenly over the bottom of the pan, pressing lightly with fingertips to firm and even out. Refrigerate until needed.

Make filling: In a large bowl beat the cream cheese at medium speed until light. Add the eggs, vanilla and sugar. Continue beating until creamy and light. Pour into crust in the pan and bake for 35 minutes.

Make topping: Beat together sour cream, sugar and vanilla.

Remove the cheese cake from the oven after 35 minutes; spread with the sour cream mixture and bake for 5 more minutes. Cool in the pan on a wire rack, then refrigerate overnight.

Remove the side of the springform pan and cut into wedges to serve. 8 servings.
