Orange Coffee Cake Recipe

2 or 3 large oranges

¾ cup butter

1 cup sugar

2 large eggs

1 cup finely chopped dates

2 cups sifted all-purpose flour

1 teaspoon baking soda

¼ teaspoon salt

1 teaspoon vanilla

Preheat the oven to 350 degrees. Grease a 13-inch by 9-inch baking pan. Juice the oranges to make 1 cup of juice. Grind the orange rind to make about 1 cup. Cream the butter; gradually add the sugar and cream until light and fluffy. Blend in the eggs. Stir in the dates and the rind. Sift flour, baking soda and salt; add alternately to the creamed mixture with the orange juice. Add the vanilla. Turn the batter into the prepared baking pan and bake for 40 minutes, or until cake tester comes out clean. Cool and cut into squares. About 12 servings.
